1/2 cup (65 g) plain flour, 4 medium eggs, one tsp. baking powder, 1/2 cup (100 g) granulated sugar, 1/4 tsp. salt, one tsp. vanilla, for filling (1 1/4 cups (315 ml) whipping cream, 3 tbsp. granulated sugar, 3 tbsp. apricot jam/jelly, 1/4 cup almonds, toasted and finely chopped) for icing (30 g unsalted butter, one cup confectioners' sugar, 3 tbsp. milk, one tsp. vanilla)
